Today’s Healthy Dessert: Coconut Mango Chia Pudding

As the weather gets warmer, I find myself craving light and refreshing desserts that are not only delicious but also good for my body. Today, I am excited to share with you my recipe for Coconut Mango Chia Pudding. This dessert is perfect for a summer treat or a post-dinner indulgence.

Ingredients:

  • 400ml coconut milk
  • 1 ripe mango
  • 60g chia seeds
  • 2 tbsp agave nectar
  • 1 tsp vanilla extract
  • for garnish

Kitchen Tools:

  • mixing bowl
  • whisk
  • food processor
  • mason jars

To start, in a mixing bowl, combine the coconut milk, chia seeds, agave nectar, and vanilla extract. Stir well to ensure that the chia seeds are evenly distributed. Cover the bowl and place it in the refrigerator for at least 4 hours or overnight to allow the chia seeds to expand and create a pudding-like consistency.

In the meantime, peel and dice the ripe mango. Place the mango pieces in a food processor and blend until smooth. Once the chia pudding has set, layer the pudding and mango puree in individual mason jars, alternating between the two.

Finish off the Coconut Mango Chia Pudding with a sprinkle of shredded coconut on top for added texture and flavor. Serve chilled and enjoy the tropical, creamy goodness of this healthy dessert.

The approximate total weight of the cooked dish is 700g, with 4 servings at around 175g each. Each serving is approximately 250 calories.

One unique tip for this recipe is to add a splash of lime juice to the mango puree for a tangy twist that complements the sweetness of the coconut chia pudding.
