Today’s Unique Dessert Recipe: Lavender Lemon Cheesecake Bars

As the weather starts to warm up, I find myself craving light and refreshing desserts. That’s why I decided to create a unique recipe for Lavender Lemon Cheesecake Bars. The combination of floral lavender and zesty lemon creates a perfect balance of flavors in these bars that are sure to be a hit at any summer gathering.

For this recipe, you will need the following ingredients:

  • 150g butter, melted
  • 200g digestive biscuits, crushed
  • 400g cream cheese, softened
  • 150g sugar
  • 2 eggs
  • 3 tbsp lemon juice
  • 2 tbsp dried lavender
  • 1 tbsp cornstarch
  • for serving

In addition to the ingredients, you will need the following kitchen tools:

  • mixing bowl
  • 9×9 inch baking dish
  • hand mixer
  • saucepan

Start by preheating your oven to 180°C (350°F) and lining the baking dish with parchment paper. In a mixing bowl, combine the melted butter and crushed digestive biscuits until well mixed. Press the mixture into the bottom of the baking dish to form the crust.

In a saucepan, heat the cream cheese and sugar over low heat until the mixture is smooth and there are no lumps. Remove from heat and stir in the eggs, lemon juice, dried lavender, and cornstarch until well combined. Pour the mixture over the crust in the baking dish.

Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Allow the cheesecake bars to cool to room temperature, then refrigerate for at least 2 hours to set.

Before serving, cut the cheesecake into bars and top with a dollop of whipped cream. The lavender lemon combination is both unique and delicious, making these bars a standout dessert for any occasion.

The approximate total weight of the cooked dish is 1000g, with 12 servings at approximately 83g each. Each serving is approximately 250 calories.

For an extra special touch, try dusting the top of the cheesecake bars with a mixture of powdered sugar and dried lavender before serving. This adds a beautiful finishing touch and enhances the floral flavor of the lavender in the dessert.
