Ingredients:

  • 400g heavy cream
  • 200g whole milk
  • 100g sugar
  • 12g gelatin sheets
  • 2 tbsp dried lavender
  • Zest of 1 lemon
  • Juice of 1 lemon

Kitchen Tools:

  • Saucepan
  • Whisk
  • Fine mesh strainer
  • Ramekins

Start by heating the heavy cream, whole milk, and sugar in a saucepan over medium heat until it begins to simmer. Remove the saucepan from heat and add in the dried lavender, allowing it to steep for 10 minutes. Strain the mixture through a fine mesh strainer to remove the lavender.

Soften the gelatin sheets in cold water for about 5 minutes. Once softened, squeeze out any excess water and add the gelatin sheets to the warm cream mixture, stirring until fully dissolved. Mix in the lemon zest and lemon juice for a bright, citrusy flavor.

Divide the mixture among ramekins and refrigerate for at least 4 hours until set. To serve, dip the bottoms of the ramekins in hot water for a few seconds and then invert the panna cotta onto a plate.

This Lavender Lemon Panna Cotta has a total weight of approximately 800g. It serves 4 people with an average serving weight of 200g. Each serving is estimated to have around 300 calories.
