  • eggs (3)
  • vanilla extract (10ml)
  • cranberries (150g)
  • pomegranate seeds (100g)
  • digestive biscuits (150g)
  • butter (100g)
  • lemon zest (from 1 lemon)

Start by preheating your oven to 160°C (320°F). In a food processor, crush the digestive biscuits until they form fine crumbs. Melt the butter and mix it with the biscuit crumbs. Press this mixture into the base of a greased springform pan to create the crust.

In a mixing bowl, combine the cream cheese, sugar, eggs, and vanilla extract. Use an electric mixer to blend the ingredients until smooth and creamy. Pour the mixture over the prepared crust in the springform pan.

Place the cranberries in a saucepan with a splash of water and cook over low heat until they soften and burst. Stir in the pomegranate seeds and let the mixture cool slightly. Spoon this fruity compote over the cheesecake mixture in the pan, creating a swirl effect.

Bake the cheesecake in the preheated oven for about 45-50 minutes, or until the center is almost set. Once baked, remove it from the oven and let it cool completely before refrigerating for at least 4 hours or overnight.
