Discovering the Magic of Creamy Butternut Squash Pasta

Today, I am excited to share with you a dish that has quickly become a favorite in my household. Creamy butternut squash pasta is a comforting and satisfying meal that is perfect for cozy evenings at home. The velvety sauce is rich and creamy, with a hint of sweetness from the butternut squash, making it a truly unforgettable dish.

Ingredients:

  • butternut squash (600g)
  • pasta of your choice (300g)
  • onion (1 medium)
  • garlic cloves (2)
  • vegetable broth (500ml)
  • coconut milk (200ml)
  • nutmeg (1/2 tsp)
  • olive oil
  • salt and pepper to taste

Kitchen Tools:

  • saucepan
  • baking sheet
  • blender

To start, preheat your oven to 200°C. Peel and dice the butternut squash, then place it on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for about 30 minutes, or until the squash is tender and slightly caramelized.

In the meantime, cook the pasta according to package instructions until al dente. Dice the onion and garlic, then sauté them in a saucepan with a bit of olive oil until soft and translucent.

Once the butternut squash is cooked, transfer it to a blender along with the sautéed onion and garlic. Add the vegetable broth, coconut milk, nutmeg, and a bit more salt and pepper to taste. Blend until smooth and creamy.

Pour the butternut squash sauce over the cooked pasta and stir until well combined. Serve hot, garnished with a sprinkle of nutmeg and freshly cracked black pepper.

This creamy butternut squash pasta is sure to be a hit with your family and friends. The total weight of the cooked dish is approximately 1200g, with 4 servings at 300g each. Each serving is around 400 calories.

One tip to elevate this dish is to add a handful of toasted pine nuts on top for some extra crunch and flavor. It adds a wonderful texture contrast to the creamy sauce.
