I was inspired to create this Exotic Coconut Curry Soup after a recent trip to Southeast Asia, where I fell in love with the bold flavors of the region. This dish combines the creamy richness of coconut milk with the aromatic spices of curry, resulting in a dish that is both comforting and exotic.

Ingredients:

  • 400ml coconut milk
  • 300g chicken breast, sliced
  • 1 large sweet potato, diced
  • 1 red bell pepper, sliced
  • 2 stalks lemongrass, crushed
  • 3 tbsp red curry paste
  • 2 tbsp fish sauce
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped

To start, heat a large pot over medium heat and add the red curry paste. Cook for a minute until fragrant, then add the sliced chicken breast and cook until browned. Next, add the diced sweet potato, sliced bell pepper, and crushed lemongrass. Stir everything together and cook for a few minutes until the vegetables begin to soften.

Pour in the coconut milk and let the soup come to a gentle simmer. Add the fish sauce and lime juice, then let the flavors meld together for about 15-20 minutes. Once the sweet potato is tender and the chicken is cooked through, taste the soup and adjust the seasoning if needed.

Before serving, remove the lemongrass stalks and garnish the soup with fresh cilantro. The aromatic flavors of the lemongrass and the spicy curry paste will transport you to the bustling markets of Southeast Asia with every spoonful.
