  • bell pepper (1, thinly sliced)
  • cucumber (1, julienned)
  • carrot (1, grated)
  • red cabbage (100g, thinly sliced)
  • green onions (2, thinly sliced)
  • fresh cilantro (a handful, chopped)
  • roasted peanuts (50g, chopped)

  • cutting board

I start by cooking the rice noodles according to the package instructions until they are al dente. Once done, I drain the noodles and rinse them under cold water to stop the cooking process. In a large mixing bowl, I combine the cooked noodles with the bell pepper, cucumber, carrot, red cabbage, green onions, and cilantro.

Next, I prepare the spicy peanut dressing by whisking together the following ingredients in a small bowl:
– 3 tablespoons of peanut butter
– 2 tablespoons of soy sauce
– 1 tablespoon of rice vinegar
– 1 tablespoon of honey
– 1 clove of garlic, minced
– 1 teaspoon of grated ginger
