Today’s Special: Roasted Cauliflower Steak with Red Pepper Coulis

Lately, I’ve been craving something hearty and flavorful, yet still light and healthy. That’s why I’m excited to share this unique recipe for Roasted Cauliflower Steak with Red Pepper Coulis. It’s a dish that combines the earthy richness of cauliflower with the tangy sweetness of red peppers, creating a perfect balance of flavors and textures. Whether you’re a vegetarian looking for a satisfying main course or just want to try something different, this recipe is sure to impress.

Ingredients:

  • 1 head of cauliflower
  • 2 red bell peppers
  • 50ml olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • blender

To start, preheat your oven to 400°F (200°C). Trim the leaves and stem from the cauliflower, then slice it into 1-inch thick steaks. Place the cauliflower steaks on a baking sheet, drizzle with olive oil, and season with smoked paprika, cumin, salt, and pepper. Roast in the oven for 25-30 minutes, until golden brown and tender.

Meanwhile, roast the red bell peppers directly over a gas flame or under the broiler until charred on all sides. Transfer the peppers to a bowl, cover with plastic wrap, and let them steam for 10 minutes. Peel off the skin, remove the seeds, and place the roasted peppers in a blender. Add a splash of olive oil, salt, and pepper, then blend until smooth to create the red pepper coulis.

To serve, spoon a generous amount of red pepper coulis onto a plate and top with a roasted cauliflower steak. Drizzle with extra coulis for added flavor, and garnish with fresh herbs or a sprinkle of smoked paprika.

This Roasted Cauliflower Steak with Red Pepper Coulis serves 4 people, with each serving weighing approximately 250g. One serving of this dish is about 200 calories.

For an extra pop of flavor, try adding a sprinkle of crumbled feta cheese or toasted pine nuts on top of the cauliflower steak before serving. The salty richness of the cheese or the nutty crunch of the nuts will take this dish to the next level.

I hope you enjoy making and eating this unique dish as much as I do. Feel free to customize it to your taste by experimenting with different herbs, spices, or additional toppings. Let me know how it turns out for you!
