  • pistachios (100g, shelled)
  • blood oranges (2)
  • brown sugar (50g)
  • balsamic vinegar (50ml)
  • fresh rosemary (a few sprigs)
  • olive oil
  • salt
  • black pepper

To make this dish, you’ll need the following kitchen tools:

  • food processor
  • baking sheet
  • saucepan

Start by preheating your oven to 180°C and lining a baking sheet with parchment paper. Place the pistachios in a food processor and pulse until finely ground. Season the salmon fillets with salt and pepper, then press the ground pistachios onto the flesh side of the fillets.
