Aromatic Lamb and Coconut Curry

Today, I am thrilled to share my latest culinary creation: an aromatic lamb and coconut curry that is perfect for cozy nights in. This dish combines the richness of lamb with the creaminess of coconut milk, resulting in a flavorful and comforting meal that is sure to impress your taste buds.

Ingredients:

  • 500g lamb shoulder, diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 cinnamon stick
  • 3 cardamom pods
  • 400ml coconut milk
  • 250ml chicken stock
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Kitchen Tools:

  • large pot
  • wooden spoon

To start, heat some oil in a large pot over medium heat. Add the diced lamb shoulder and brown it on all sides. Once the lamb is browned, remove it from the pot and set it aside.

In the same pot, add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are soft and translucent. Add the cumin powder, coriander powder, turmeric powder, cinnamon stick, and cardamom pods. Cook for another minute until fragrant.

Return the browned lamb to the pot and pour in the coconut milk and chicken stock. Season with salt and pepper. Bring the mixture to a simmer, then reduce the heat to low and cover. Let it simmer gently for about 1.5-2 hours, stirring occasionally, until the lamb is tender.

Once the lamb is cooked through and the sauce has thickened, remove the cinnamon stick and cardamom pods. Taste and adjust the seasoning if needed.

Serve the aromatic lamb and coconut curry hot, garnished with chopped cilantro. This dish pairs perfectly with steamed rice or warm naan bread.
