Today’s Special: Spiced Pineapple Pudding Cake

Hey there, fellow foodies! Today, I am excited to share a unique and delightful dessert recipe with you all. As the weather starts to cool down, I find myself craving warm, comforting treats with a little twist. So, I decided to create this Spiced Pineapple Pudding Cake that combines the sweetness of pineapple with warm spices for the perfect cozy dessert. Let’s dive into the recipe!

Ingredients:

  • 1 can (565g) canned pineapple tidbits, drained
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 1/2 cup (120ml) milk
  • 1/4 cup (56g) butter, melted
  • 1 tsp vanilla extract
  • 1 cup (200g) brown sugar
  • 1 cup (240ml) hot water

Kitchen Tools:

  • mixing bowl
  • whisk
  • 8×8 baking dish
  • oven

To start, preheat your oven to 350°F (180°C). In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon, ginger, and salt. Add in the milk, melted butter, and vanilla extract, stirring until just combined. Fold in the drained pineapple tidbits, then spread the mixture evenly into an 8×8 baking dish.

In a separate bowl, mix the brown sugar with hot water until the sugar is dissolved. Carefully pour this mixture over the batter in the baking dish – do not stir. Place the dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and the cake is set.

Once ready, remove the Spiced Pineapple Pudding Cake from the oven and let it cool slightly. Serve warm, spooning the cake and sauce into bowls. You can enjoy it on its own or add a scoop of vanilla ice cream for an extra indulgent treat.

Approximate total weight: 1200g

Average weight of one serving: 150g
Approximate calorie count per serving: 250 calories

Pro tip: For an extra layer of flavor, sprinkle some chopped pecans or walnuts over the batter before pouring the brown sugar mixture on top. This adds a nice crunch to the dessert!

I hope you give this Spiced Pineapple Pudding Cake a try and enjoy the warm, spiced goodness it brings. Feel free to experiment with different fruits or spices to make it your own. Happy baking!
