Today, I’m excited to share a unique recipe for avocado chocolate muffins that are not only delicious but also healthy. Avocados are known for their creamy texture and nutrient-rich profile, making them a perfect addition to these indulgent treats. These muffins are great for breakfast, snack time, or even dessert!

Ingredients:

  • 2 ripe avocados (mashed)
  • 150g coconut sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 30g cocoa powder
  • 150g whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 120ml almond milk

Kitchen Tools:

To start, preheat your oven to 180°C and line a muffin tin with paper liners. In a mixing bowl, combine the mashed avocados and coconut sugar until well mixed. Add in the egg and vanilla extract, mixing until smooth.

In a separate bowl, sift together the cocoa powder, whole wheat flour, baking powder, and salt. Slowly add the dry ingredients into the avocado mixture, alternating with the almond milk. Stir until just combined, being careful not to overmix.

Divide the batter evenly among the prepared muffin tin, filling each cup about three-quarters full. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

The total weight of the cooked dish is approximately 600g, with 12 servings. Each serving weighs around 50g, with an approximate calorie count of 150 per muffin.
