Comforting Butternut Squash Mac and Cheese

Today, I’m sharing a cozy and comforting dish that’s perfect for those chilly fall evenings when you want a little taste of childhood with a grown-up twist. This recipe for Butternut Squash Mac and Cheese is creamy, cheesy, and full of comforting flavors that will warm you from the inside out.

Ingredients:

  • 1 small butternut squash, peeled and diced
  • 200g elbow macaroni
  • 200g cheddar cheese, grated
  • 100g cream cheese
  • 1 cup milk
  • 2 tbsp butter
  • 1/2 cup breadcrumbs
  • Pinch of nutmeg
  • Salt and pepper to taste

Kitchen Tools:

  • knife
  • cutting board
  • saucepan
  • blender
  • oven

Start by preheating your oven to 375°F (190°C). Bring a large pot of salted water to a boil and cook the diced butternut squash until tender, about 10 minutes. In a separate pot, cook the elbow macaroni according to package instructions until al dente.

In a saucepan, melt the butter over medium heat. Add the cooked butternut squash, cheddar cheese, cream cheese, milk, nutmeg, salt, and pepper. Cook, stirring occasionally, until the cheese is melted and the sauce is smooth.

Combine the cooked macaroni with the butternut squash cheese sauce, then transfer the mixture to a baking dish. Sprinkle the breadcrumbs over the top and bake in the preheated oven for 20-25 minutes, until the breadcrumbs are golden brown and the cheese sauce is bubbly.

Serve the Butternut Squash Mac and Cheese hot, with a sprinkle of freshly ground black pepper. This dish is perfect for a cozy night in or as a crowd-pleasing side dish for a fall gathering.

This recipe yields approximately 1200g of Butternut Squash Mac and Cheese, with 6 servings of around 200g each. Each serving is approximately 450 calories.

One clever tip for this recipe is to add a touch of Dijon mustard to the cheese sauce for an extra tangy kick that complements the sweetness of the butternut squash beautifully.

I hope you give this Butternut Squash Mac and Cheese a try and enjoy it as much as I do. Feel free to customize the recipe with your favorite cheeses or additional mix-ins to make it your own!
