Mushroom Risotto with Truffle Oil

Today, I’m excited to share a delicious recipe that’s perfect for a cozy night in or a special dinner with loved ones. This creamy Mushroom Risotto with Truffle Oil is a decadent dish that is sure to impress your taste buds.

Ingredients:

  • Arborio rice (300g)
  • Button mushrooms, sliced (200g)
  • Shallots, minced (2)
  • Garlic, minced (3 cloves)
  • Chicken or vegetable broth (1L)
  • White wine (150ml)
  • Parmesan cheese, grated (100g)
  • Butter (50g)
  • Truffle oil (2 tbsp)
  • Salt and pepper to taste

Kitchen Tools:

  • Saucepan
  • Wooden spoon
  • Chef’s knife
  • Grater
  • Ladle

To start, heat the chicken or vegetable broth in a saucepan over low heat. In another saucepan, melt the butter and sauté the minced shallots and garlic until translucent. Add the sliced mushrooms and cook until they are tender.

Next, add the Arborio rice to the pan and toast it for a few minutes until it is slightly translucent. Pour in the white wine and stir until it is absorbed by the rice. Begin adding the warm broth one ladle at a time, stirring continuously until the liquid is absorbed before adding more.

Continue this process until the rice is creamy and cooked al dente. This should take about 18-20 minutes. Stir in the grated Parmesan cheese and season with salt and pepper to taste. Remove the risotto from the heat and drizzle with truffle oil.

Serve the Mushroom Risotto with Truffle Oil hot, garnished with extra Parmesan cheese and a sprinkle of fresh parsley.
