Introduction

Today, I’m excited to share with you a recipe that never fails to impress: my creamy mushroom risotto. Perfect for a cozy night in or a dinner party with friends, this dish is both comforting and elegant. The earthy flavors of the mushrooms combined with the creamy texture of the risotto rice make for a truly indulgent experience.

Ingredients

  • 200g Arborio rice
  • 300g assorted mushrooms (such as cremini, shiitake, and oyster)
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 liter vegetable broth
  • 100ml white wine
  • 50g Parmesan cheese, grated
  • 2 tablespoons of butter
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Preparation

I start by sautéing the onion and garlic in olive oil until they turn translucent. Then, I add the Arborio rice and toast it for a couple of minutes until it becomes slightly translucent. In a separate saucepan, I heat up the vegetable broth until it’s simmering.
Next, I deglaze the skillet with white wine and let it reduce by half before adding a ladleful of the hot broth to the rice. I stir constantly until the liquid is absorbed, and then add another ladleful of broth. I repeat this process until the rice is creamy and cooked al dente.
Meanwhile, in a separate skillet, I sauté the mushrooms in butter until they’re golden brown and caramelized. I fold the mushrooms and grated Parmesan cheese into the risotto, season with salt and pepper, and let it rest for a couple of minutes before serving.

Serving

The total weight of the cooked mushroom risotto is approximately 1200g, which serves 4 people. Each serving weighs around 300g, with an estimated calorie count of 400 per portion.

Clever Tip

For an extra depth of flavor, try adding a splash of truffle oil to the risotto just before serving. It will elevate the dish and add a luxurious aroma that will impress your guests.
