Ingredients:

  • 200g arborio rice
  • 150g mixed mushrooms (such as shiitake, cremini, and oyster)
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 120ml white wine
  • 1 liter vegetable broth
  • 50g grated parmesan cheese
  • 2 tbsp truffle oil
  • 2 tbsp butter
  • Salt and pepper to taste

Stir in the grated parmesan cheese and butter until melted and well combined. Season with salt and pepper to taste.
