Ingredients:

  • 200g arborio rice
  • 150g mixed mushrooms (such as shiitake, cremini, and oyster)
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 120ml white wine
  • 1 liter vegetable broth
  • 50g grated parmesan cheese
  • 2 tbsp truffle oil
  • 2 tbsp butter
  • Salt and pepper to taste

Begin adding the vegetable broth to the pan, one ladle at a time. Stir the risotto constantly, allowing each ladle of broth to be absorbed before adding the next. Continue this process until the rice is creamy and cooked to al dente.

Stir in the grated parmesan cheese and butter until melted and well combined. Season with salt and pepper to taste.
