Today’s Special: Saffron-infused Lobster Macaroni and Cheese

As the leaves begin to change color and the weather cools down, I find myself craving comforting and indulgent dishes. Today, I’m excited to share a unique twist on a classic favorite – Saffron-infused Lobster Macaroni and Cheese. This rich and flavorful dish is perfect for a cozy night in or a special occasion.

Ingredients:

  • lobster tails (approximately 500g)
  • macaroni pasta (250g)
  • butter (100g)
  • flour (50g)
  • milk (500ml)
  • saffron threads
  • cheddar cheese (200g)
  • parmesan cheese (50g)
  • breadcrumbs

Kitchen Tools:

  • saucepan
  • skillet
  • whisk
  • baking dish

Begin by cooking the lobster tails in a pot of boiling water until they are bright red and the meat is opaque. Remove the meat from the shells and chop into bite-sized pieces. Cook the macaroni pasta according to the package instructions, then set aside.

In a saucepan, melt the butter over medium heat. Add the flour and whisk constantly for a few minutes to create a roux. Slowly pour in the milk, stirring continuously until the mixture thickens. Add the saffron threads for a beautiful golden hue and a subtle flavor.

Stir in the cheddar cheese and parmesan cheese until melted and the sauce is smooth. Add the cooked lobster meat and macaroni to the sauce, stirring well to combine. Transfer the mixture to a greased baking dish.

Sprinkle breadcrumbs over the top of the dish and bake in a preheated oven at 350°F (180°C) for about 20 minutes, or until the top is golden and bubbly.

Once the dish is cooked to perfection, serve hot and enjoy the delicious flavors of the saffron-infused lobster macaroni and cheese.
