Gourmet Comfort Food: Roasted Chicken with Pistachio-Orange Stuffing

Today, I’m excited to share a truly decadent and comforting recipe that is perfect for a cozy family dinner or a special holiday meal. This roasted chicken with pistachio-orange stuffing is a unique twist on a classic dish that combines savory and sweet flavors for a truly unforgettable dining experience.

To start off, gather the following ingredients:

  • whole chicken (approx. 1.5 kg)
  • oranges (zested and juiced)
  • pistachios (chopped)
  • onion (finely chopped)
  • garlic (minced)
  • fresh thyme
  • butter
  • salt and pepper

Now, let’s move on to the preparation process. Preheat your oven to 180°C. Start by making the stuffing: In a bowl, mix together the chopped pistachios, orange zest, chopped onion, minced garlic, and fresh thyme. Season with salt and pepper to taste.

Next, prepare the chicken by rinsing it under cold water and patting it dry with paper towels. Gently loosen the skin of the chicken breast and stuff the pistachio-orange mixture underneath the skin. Place the butter slices evenly under the skin as well.

Once the chicken is stuffed, season the outside with salt, pepper, and a sprinkle of orange juice. Tie the legs together with kitchen twine and tuck the wingtips under the body of the chicken.

Place the chicken in a roasting pan and roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 75°C and the skin is golden brown and crispy.

Once the chicken is cooked through, remove it from the oven and let it rest for about 15 minutes before carving. This will allow the juices to redistribute and make the meat extra tender and flavorful.

Serve the roasted chicken with pistachio-orange stuffing hot with your favorite side dishes and enjoy the blend of savory, nutty, and citrusy flavors in every bite.

Kitchen tools you’ll need:

  • roasting pan
  • kitchen twine
  • cutting board
  • knife

This dish yields approximately 4 servings, with each serving weighing around 400 grams. One serving is estimated to be about 450 calories.

One clever tip for this recipe is to baste the chicken with the pan juices every 30 minutes during the roasting process to ensure that the meat stays moist and flavorful.

I hope you give this roasted chicken with pistachio-orange stuffing a try and make it your own with your favorite seasonal herbs and spices. It’s a true crowd-pleaser that will elevate any meal to a gourmet dining experience. Enjoy!
