Today, I’m sharing a recipe for Blackberry Basil Cheesecake Bars that are perfect for a summer gathering or a sweet treat to enjoy on a lazy afternoon. The combination of juicy blackberries and fresh basil creates a unique and refreshing flavor that will surprise and delight your taste buds.

Ingredients:

  • 200g crushed graham crackers
  • 100g butter, melted
  • 500g cream cheese, softened
  • 200g sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 150g fresh blackberries
  • 10 fresh basil leaves, finely chopped

Kitchen Tools:

  • 9×13 inch baking dish
  • hand mixer

To start, preheat your oven to 350°F. In a mixing bowl, combine the crushed graham crackers and melted butter until the mixture resembles wet sand. Press this mixture into the bottom of a greased 9×13 inch baking dish to form the crust.

In another mixing bowl, beat the cream cheese, sugar, eggs, and vanilla extract until smooth and creamy. Fold in the chopped basil until well incorporated. Pour the cream cheese mixture over the graham cracker crust.

Scatter the fresh blackberries evenly over the top of the cream cheese mixture. Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.

Allow the cheesecake bars to cool completely before slicing into squares and serving. These bars are best enjoyed chilled, so refrigerate them for at least an hour before serving.

The total weight of the cooked dish is approximately 1200g, with about 12 servings. Each serving weighs around 100g, with an estimated calorie count of 300 per serving.

One clever tip for this recipe is to add a sprinkle of finely chopped fresh basil on top of each cheesecake bar before serving to enhance the basil flavor and add a pop of color.
