Ingredients:

  • 150g purple sweet potato, grated
  • 50g coconut flour
  • 30ml beetroot juice
  • 15g chia seeds
  • 20ml coconut oil
  • 100ml almond milk
  • 20ml maple syrup
  • 30g chia jam, for serving

  • mixing bowl
  • grater
  • frying pan
  • spatula
  • measuring cups
  • whisk

Preparation:

In a mixing bowl, combine the grated purple sweet potato, coconut flour, beetroot juice, chia seeds, coconut oil, almond milk, and maple syrup. Mix well until all the ingredients are thoroughly combined. The mixture should be thick but pourable.

Heat a frying pan over medium heat and lightly grease it with coconut oil. Pour a ladleful of the batter into the pan and spread it out into a thin pancake shape. Cook for 2-3 minutes on each side until golden brown and cooked through. Repeat with the remaining batter.

Serve the purple sweet potato pancakes warm with a dollop of chia jam on top. Enjoy this unique and flavorful breakfast dish!
