  • 1 medium butternut squash, peeled and diced
  • 300g shrimp, peeled and deveined
  • 2 ripe kiwis, peeled and sliced
  • 400ml coconut milk
  • 2 tbsp curry powder
  • 1 thumb-sized piece of ginger, grated
  • 3 cloves of garlic, minced
  • 1 lime, juiced
  • Handful of fresh coriander, chopped
  • Salt and pepper to taste

Preparation

Once the squash is cooked through, I pour in the coconut milk and lime juice, stirring well to combine. I then add the shrimp to the skillet, cooking until they turn pink and opaque. Finally, I gently fold in the sliced kiwi and chopped coriander, seasoning with salt and pepper to taste.

Serving

This vibrant and flavorful dish is best served piping hot, garnished with additional lime wedges and coriander leaves. The combination of creamy coconut milk, zesty lime, and sweet kiwi perfectly complements the tender shrimp and earthy butternut squash.
