Ingredients:

  • purple potatoes (500g)
  • saffron threads (1 tsp)
  • coconut milk (400ml)
  • black sesame seeds (2 tbsp)
  • date syrup (3 tbsp)

Kitchen Tools:

  • mandoline
  • saucepan
  • steamer basket

To start, peel the purple potatoes and slice them thinly using a mandoline. In a saucepan, bring water to a boil and place a steamer basket on top. Add the sliced potatoes to the basket and steam for about 10-15 minutes until they are tender.

While the potatoes are steaming, heat the coconut milk in another saucepan over low heat. Add the saffron threads and let them infuse the milk with their beautiful color and aroma. Once the potatoes are done, transfer them to the saucepan with the saffron coconut milk and let them simmer for a few more minutes.

To serve, spoon the saffron coconut potatoes onto a plate and drizzle with date syrup. Sprinkle with black sesame seeds for a nutty crunch and a visually stunning finish.
