Healthy Snack Recipe: Avocado Banana Muffins

Today, I’m sharing a delicious and nutritious snack recipe that’s perfect for any time of day. These avocado banana muffins are packed with healthy fats, fiber, and natural sweetness. Whether you’re looking for a quick breakfast on-the-go or a satisfying afternoon snack, these muffins are sure to hit the spot.

Ingredients:

  • 2 ripe bananas (about 250g)
  • 1 ripe avocado (about 150g)
  • 1 cup whole wheat flour (120g)
  • 1/2 cup oat flour (60g)
  • 1/4 cup honey (60ml)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Kitchen Tools:

  • mixing bowl
  • muffin tin
  • muffin liners
  • blender

To start, preheat your oven to 350°F (180°C) and line a muffin tin with liners. In a mixing bowl, mash the ripe bananas and avocado together until smooth. Add in the honey and vanilla extract, mixing well.

In a separate bowl, combine the whole wheat flour, oat flour, baking powder, cinnamon, and salt. Slowly fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

Divide the batter evenly among the muffin liners and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. The muffins should be slightly golden on top and spring back when touched.

Once done, remove the muffins from the oven and let them cool in the tin for a few minutes before transferring to a wire rack to cool completely. These avocado banana muffins are best enjoyed fresh, but can be stored in an airtight container for up to 3 days.

The approximate total weight of the cooked dish is 600g, with 12 servings. Each muffin is around 50g and has approximately 120 calories per serving.
