Irresistible Crunchy Thai Peanut Noodles

Today’s Special: Crunchy Thai Peanut Noodle Salad

As the weather warms up, I find myself craving light and refreshing meals that are bursting with flavor. That’s why I’m excited to share my recipe for Crunchy Thai Peanut Noodle Salad. This dish is perfect for a picnic in the park or a quick weeknight dinner. The combination of fresh veggies, chewy noodles, and creamy peanut dressing is simply irresistible!

Ingredients:

  • rice noodles (200g)
  • carrots, julienned (100g)
  • red bell pepper, thinly sliced (100g)
  • cucumber, julienned (100g)
  • edamame, shelled (100g)
  • scallions, chopped (50g)
  • cilantro, chopped (30g)
  • roasted peanuts, chopped (50g)

Kitchen Tools:

  • large pot
  • colander
  • mixing bowl
  • whisk
  • vegetable peeler

To start, cook the rice noodles according to the package instructions. Once cooked, drain them in a colander and rinse with cold water to stop the cooking process. In a large mixing bowl, combine the cooked noodles with the julienned carrots, sliced red bell pepper, julienned cucumber, shelled edamame, chopped scallions, and cilantro.

In a separate small bowl, whisk together the ingredients for the peanut dressing. Pour the dressing over the noodle and veggie mixture, tossing everything together until well coated. Sprinkle the chopped roasted peanuts on top for an added crunch.

Serve the Crunchy Thai Peanut Noodle Salad chilled, garnished with extra cilantro and peanuts if desired.
