Irresistible Recipe: Sweet Potato Tacos You Need to Try Today!

Today, I’m excited to share a unique and vibrant recipe for sweet potato tacos that I recently created. The combination of sweet and savory flavors in this dish is perfect for a cozy night in or a casual dinner with friends. I love experimenting with different ingredients and creating dishes that are both delicious and unexpected, and these tacos definitely fit the bill!

Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 1 can of black beans, drained and rinsed
  • 1 small red onion, diced
  • 1 bell pepper, sliced
  • 1 ripe avocado, sliced
  • 6 small flour tortillas
  • Fresh cilantro, chopped
  • 2 limes, cut into wedges
  • 2 tbsp olive oil
  • Spices: cumin, paprika, chili powder, salt, and pepper

While the sweet potatoes are roasting, heat a skillet over medium heat. Add a drizzle of olive oil and sauté the red onion and bell pepper until softened. Add the black beans to the skillet and season with additional cumin, chili powder, salt, and pepper.

Warm the tortillas in a dry skillet or in the oven until soft and pliable. To assemble the tacos, fill each tortilla with a spoonful of the sweet potato mixture and top with the black bean and vegetable mixture. Finish with slices of avocado, a sprinkle of fresh cilantro, and a squeeze of lime juice.
