Today, I’m excited to share a unique dessert recipe that’s perfect for any time of year: Spiced Carrot Cake Muffins. These muffins are a delightful twist on the classic carrot cake, with a warm blend of spices that will fill your kitchen with a comforting aroma. Whether you’re craving a sweet treat for breakfast or a cozy dessert after dinner, these muffins are sure to hit the spot.

Ingredients:

  • 200g carrots, grated
  • 180g all-purpose flour
  • 150g granulated sugar
  • 100g walnuts, chopped
  • 75g raisins
  • 100g unsalted butter, melted
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt

Kitchen Tools:

  • grater
  • muffin tin
  • oven

To start, preheat your oven to 350°F (175°C) and line a muffin tin with paper liners. In a large mixing bowl, combine the grated carrots, flour, sugar, walnuts, raisins, melted butter, egg, baking powder, cinnamon, nutmeg, and salt. Mix everything together until just combined, being careful not to overmix.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Place the tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be golden brown and slightly springy to the touch.

Once done, remove the muffin tin from the oven and allow the muffins to cool for a few minutes before transferring them to a wire rack to cool completely. These Spiced Carrot Cake Muffins are delicious served warm or at room temperature, and they can be enjoyed on their own or with a dollop of cream cheese frosting for an extra special treat.

The approximate total weight of the cooked dish is 800g, with 12 servings. Each muffin weighs approximately 67g, and each serving is an estimated 220 calories.

One clever tip to make these muffins even more flavorful is to add a pinch of black pepper to the batter before baking. The pepper adds a subtle warmth that complements the spices beautifully, taking these muffins to the next level.
