Irresistible Spicy Cinnamon Tofu Curry Recipe: A Vegan

Today’s Unique Vegetarian Recipe: Spicy Cinnamon Tofu Curry

Today, I’m excited to share a new vegetarian recipe that I recently created – Spicy Cinnamon Tofu Curry. As the weather starts to cool down, I find myself craving warm and comforting dishes with a bit of a kick. This curry hits all the right notes with its unique combination of spices and textures. I hope you enjoy making it as much as I did!

Ingredients:

  • 500g firm tofu, cubed
  • 1 medium red onion, sliced
  • 1 red bell pepper, sliced
  • 400ml coconut milk
  • 1 can of chopped tomatoes
  • 500ml vegetable broth
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cayenne pepper
  • to taste
  • 2 tbsp olive oil
  • Fresh cilantro, chopped, for garnish

Kitchen Tools:

  • measuring spoons

To start, heat the olive oil in a large pot over medium heat. Add the minced garlic and grated ginger, cooking until fragrant. Add the sliced red onion and bell pepper, cooking until they start to soften.

Next, add the cubed tofu to the pot, along with the cinnamon, cumin, coriander, cayenne pepper, salt, and pepper. Stir well to coat the tofu and vegetables with the spices.

Pour in the coconut milk, chopped tomatoes, and vegetable broth. Bring the curry to a simmer and let it cook for about 20 minutes, allowing the flavors to meld together.

Once the curry has thickened slightly, taste and adjust the seasonings as needed. Serve the Spicy Cinnamon Tofu Curry hot, garnished with fresh cilantro. Enjoy!
