This Spicy Mango-Chickpea Salad is the perfect balance of sweet, spicy, and savory that satisfies my taste buds every time. Plus, it’s a great way to use up those extra mangoes from the grocery store!

Ingredients:

  • 1 ripe mango, diced (about 200g)
  • 1 cup cooked chickpeas, drained (about 240g)
  • 1 red bell pepper, diced (about 150g)
  • 1 jalapeño, thinly sliced
  • 1/2 red onion, finely chopped (about 60g)
  • Handful of fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons of olive oil
  • 1 tablespoon of honey
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of cayenne pepper
  • Salt and pepper to taste

In a small bowl, whisk together the lime juice, olive oil, honey, ground cumin, cayenne pepper, salt, and pepper until well combined. Pour this dressing over the mango-chickpea mixture and toss to coat evenly.

Finally, sprinkle the chopped cilantro over the top of the salad and give it one final toss to incorporate all the flavors. Allow the salad to sit for at least 10 minutes to let the flavors meld together before serving.
