This Sweet and Spicy Mango Shrimp Stir-Fry is a delightful combination of succulent shrimp, juicy mango, and a kick of heat that will tantalize your taste buds.

Ingredients:

  • medium shrimp (300g)
  • ripe mango, diced (1 large)
  • red bell pepper, sliced (1)
  • garlic, minced (3 cloves)
  • fresh ginger, grated (1 tbsp)
  • soy sauce (3 tbsp)
  • honey (2 tbsp)
  • sriracha sauce (1 tbsp)
  • cornstarch (1 tbsp)
  • toasted sesame oil (1 tbsp)
  • green onions, chopped (2 stalks)
  • crushed peanuts (for garnish)

To start, heat some oil in a wok over medium-high heat. Add the minced garlic and grated ginger, and sauté for a minute until fragrant. Toss in the shrimp and cook until they turn pink and opaque. Remove the shrimp from the wok and set them aside.

In the same wok, add the diced mango and sliced red bell pepper. Stir-fry for a few minutes until the peppers are slightly softened and the mango is caramelized. Return the shrimp to the wok.

In a small bowl, whisk together soy sauce, honey, sriracha, and cornstarch. Pour this sauce over the shrimp and mango mixture and stir well to coat. Let the sauce thicken slightly.

Finish off the dish by drizzling toasted sesame oil over the stir-fry and garnishing with chopped green onions and crushed peanuts for some extra crunch.
