As the warmer weather rolls in, I find myself craving bright and refreshing flavors in my desserts. Today, I’m excited to share with you my recipe for a Dreamy Lavender Lemon Tart. This dessert is a perfect balance of floral lavender notes and zesty lemon, making it an ideal treat for a sunny afternoon or a special gathering.

Ingredients:

  • store-bought pie crust (200g)
  • eggs (3)
  • sugar (150g)
  • fresh lemon juice (120ml)
  • heavy cream (240ml)
  • dried lavender buds (2 tbsp)

  • 9-inch tart pan
  • mixing bowls
  • whisk
  • saucepan
  • fine mesh strainer

To start, preheat your oven to 350°F (175°C). Press the store-bought pie crust into a 9-inch tart pan, trimming any excess dough. Blind bake the crust for about 15 minutes until it’s lightly golden brown.

In a saucepan, combine the heavy cream and dried lavender buds. Heat the mixture until it just starts to simmer, then remove it from the heat and let it steep for 10 minutes. Strain out the lavender buds and set the infused cream aside.

In a mixing bowl, whisk together the eggs and sugar until well combined. Slowly whisk in the fresh lemon juice and the infused cream. Pour the filling into the pre-baked tart crust.

Bake the tart for 25-30 minutes, or until the filling is set but still slightly jiggly in the center. Allow the tart to cool to room temperature before refrigerating it for at least 2 hours to set.

Once chilled, slice the Dreamy Lavender Lemon Tart into wedges and serve. Each bite is a burst of citrusy sweetness with a subtle hint of floral lavender, creating a truly dreamy dessert experience.

This tart weighs approximately 800g total once cooked and serves 8 people. Each slice is about 100g and has an approximate calorie count of 250.

One unique tip for this recipe is to sprinkle a little extra dried lavender buds on top of the tart before serving. This not only adds a pop of color but also enhances the lavender flavor for an extra special touch.
