For this recipe, you’ll need the following ingredients:

  • lobster tails (300g), cooked and chopped
  • arborio rice (300g)
  • shallots (2), finely chopped
  • garlic cloves (2), minced
  • white wine (120ml)
  • chicken or vegetable broth (1L), warmed
  • saffron threads (1/2 tsp), crushed
  • parmesan cheese (50g), grated
  • butter (50g)
  • olive oil
  • salt and pepper to taste

To make this exquisite dish, you’ll need the following kitchen tools:

  • large sauté pan
  • wooden spoon
  • ladle
  • grater

Start by heating some olive oil in a large sauté pan over medium heat. Add the shallots and garlic, sautéing until they are translucent and fragrant. Next, add the arborio rice to the pan and toast it for a few minutes until it’s slightly golden.

Deglaze the pan with white wine, scraping up any browned bits from the bottom. Once the wine has reduced slightly, add the crushed saffron threads to the pan. Begin adding the warmed broth to the risotto, one ladle at a time, stirring constantly and allowing the liquid to absorb before adding more.

Continue this process until the risotto is creamy and the rice is tender but still slightly firm to the bite. This should take about 18-20 minutes. Just before the risotto is done, stir in the chopped lobster meat, parmesan cheese, and butter. Season with salt and pepper to taste.

Once everything is well combined and the lobster is heated through, remove the pan from the heat. Let the risotto rest for a few minutes before serving to allow the flavors to meld together.

This saffron-infused lobster risotto yields approximately 4 servings, with each serving weighing around 350g. One serving of this rich and decadent dish is estimated to be around 500 calories.

A clever tip for this recipe is to save the lobster shells to make a homemade lobster broth. Simply simmer the shells in water with some aromatics like onion, carrot, and celery to create a flavorful base for the risotto.
