Greetings, foodies! Today, I am excited to share with you a luxurious and indulgent dish that is guaranteed to elevate any dining experience – my unique Lobster Risotto Supreme. This recipe is perfect for a special occasion or when you want to treat yourself to something truly special.

To create this decadent dish, you will need the following ingredients (weights are approximate):

  • 2 lobster tails (200g each)
  • 200g arborio rice
  • 150ml champagne
  • 1L lobster stock
  • 2 shallots, finely chopped
  • 50g butter
  • 50g freshly grated parmesan cheese
  • Chopped chives for garnish
  • Salt and pepper to taste

For this recipe, you will need the following kitchen tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • grater

Begin by bringing the lobster stock to a gentle simmer in a saucepan. Meanwhile, in a separate saucepan, melt half of the butter over medium heat. Add the chopped shallots and sauté until they are translucent.

Next, add the arborio rice to the saucepan with the shallots and butter. Stir the rice for a few minutes until it is well coated and slightly toasted. Deglaze the pan with the champagne, stirring constantly until the liquid is absorbed.

Begin adding the warm lobster stock to the rice, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more. Continue this process until the rice is cooked to al dente, about 18-20 minutes.

While the risotto is cooking, prepare the lobster tails by boiling or steaming them until cooked through. Remove the meat from the shells and chop into bite-sized pieces.

Once the risotto is cooked to perfection, remove it from heat and stir in the remaining butter and grated parmesan cheese. Gently fold in the chopped lobster meat. Season with salt and pepper to taste.

To serve, spoon the lobster risotto into bowls and garnish with chopped chives. The total weight of the cooked dish is approximately 1200g, with 4 servings at 300g each. Each serving is approximately 500 calories.
