Today, I’m sharing one of my favorite dishes to indulge in during the cozy fall season — Mushroom Risotto with a drizzle of luscious truffle oil. This creamy and savory dish never fails to warm me up and comfort me on chilly evenings. Let’s dive into the recipe!

Ingredients:

  • Arborio rice (300g)
  • Mushrooms of your choice, sliced (200g)
  • Onion, finely chopped (1)
  • Garlic, minced (2 cloves)
  • Vegetable broth (1 liter)
  • Parmesan cheese, grated (100g)
  • Butter (50g)
  • Truffle oil for drizzling
  • Salt and pepper to taste

Kitchen Tools:

  • Saucepan
  • Wooden spoon
  • Chef’s knife
  • Grater

To start, heat some butter in a saucepan over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant. Toss in the sliced mushrooms and continue to cook until they are tender and golden brown.

Next, add the Arborio rice to the pan, stirring constantly for a couple of minutes until it is well coated with the buttery mushroom mixture. Begin adding the vegetable broth a ladleful at a time, allowing the rice to absorb the liquid before adding more. Keep stirring the risotto gently and adding broth until the rice is creamy and al dente.

Once the rice is cooked to perfection, stir in the grated Parmesan cheese until it’s melted and well incorporated. Season with salt and pepper to taste.

To serve, ladle the mushroom risotto into bowls and finish off with a luxurious drizzle of truffle oil. The aroma of the truffle oil will elevate the dish to a whole new level of indulgence.
