Ingredients:

  • 2 boneless, skinless chicken breasts (400g), cubed
  • 1 ripe mango, peeled and diced (200g)
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 red chili, finely chopped
  • 1 can of coconut milk (400ml)
  • 2 tablespoons of curry powder
  • 1 tablespoon of soy sauce
  • 1 tablespoon of honey
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

Kitchen Tools:

To start, heat a large skillet over medium heat. Add a splash of oil and sauté the onion until soft and translucent. Next, add the garlic and red chili, cooking for another minute until fragrant.

Add the chicken cubes to the skillet and cook until they are browned on all sides. Sprinkle the curry powder over the chicken, stirring to coat evenly. Pour in the coconut milk, soy sauce, and honey, stirring to combine all the flavors.

Gently fold in the diced mango and season the curry with salt and pepper to taste. Let the curry simmer for about 15-20 minutes, allowing the flavors to meld together and the chicken to cook through.

Once the chicken is cooked and the mango has softened slightly, remove the skillet from the heat. Serve the Spicy Mango Chicken Curry over steamed rice, garnished with fresh cilantro for a pop of color and freshness.
