  • boneless skinless chicken thighs (500g)
  • mango, diced (2 medium)
  • coconut milk (400ml)
  • onion, chopped (1 large)
  • garlic, minced (4 cloves)
  • fresh ginger, grated (1 tbsp)
  • curry powder (2 tbsp)
  • chili flakes (1 tsp)
  • ground turmeric (1 tsp)
  • salt (1 tsp)
  • black pepper (1/2 tsp)
  • vegetable oil (2 tbsp)
  • fresh cilantro, chopped (for garnish)

To start, heat vegetable oil in a large skillet over medium heat. Add chopped onions, minced garlic, and grated ginger. Sauté until the onions are translucent and fragrant, about 5 minutes.

Next, add the boneless skinless chicken thighs to the skillet and cook until they are browned on all sides, about 8-10 minutes. Sprinkle curry powder, turmeric, salt, and black pepper over the chicken, stirring to coat evenly.

Pour in the coconut milk, diced mangoes, and chili flakes. Stir well to combine all the ingredients. Reduce the heat to low and let the curry simmer for 20-25 minutes, allowing the flavors to meld together.
