Welcome to my kitchen! Today, I’m excited to share a recipe that brings together the sweet and spicy flavors of mango and coconut in a delicious curry. This dish is perfect for a cozy night in or a special gathering with friends and family.

Ingredients:

  • 200g chicken breast
  • 1 ripe mango
  • 400ml coconut milk
  • 1 onion, chopped
  • 1 red chili, sliced
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 2 tbsp vegetable oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh coriander, for garnish

Kitchen Tools:

  • wooden spoon

To start, heat the vegetable oil in a saucepan over medium heat. Add the chopped onion, garlic, and ginger, and sauté until fragrant. Next, add the curry powder and turmeric, stirring to coat the onions.

Cut the chicken breast into bite-sized pieces and add them to the saucepan. Cook until the chicken is browned on all sides. Then, pour in the coconut milk and bring the mixture to a simmer.

Peel and dice the ripe mango, adding it to the curry along with the sliced red chili. Season with salt and pepper to taste, allowing the flavors to meld together over low heat for about 15 minutes.

Once the curry has thickened slightly and the chicken is cooked through, remove the saucepan from the heat. Serve the spicy mango coconut curry over steamed rice, garnished with fresh coriander for a burst of freshness.

Tips:

For an extra kick of heat, add a sprinkle of chili flakes before serving. The contrast between the sweet mango and spicy chili creates a flavor explosion in every bite!
