Greetings, foodies! Today I am excited to share a new creation that combines the umami-rich flavor of miso with the subtle sweetness of eggplant. This dish is perfect for a cozy night in or a fancy dinner party, and it’s a great way to impress your guests with something unexpected.

Ingredients:

  • 2 Japanese eggplants
  • 50g white miso paste
  • 30ml mirin
  • 15ml sesame oil
  • 10g ginger, grated
  • 2 green onions, thinly sliced
  • 10g toasted sesame seeds

Kitchen Tools:

  • baking sheet
  • knife
  • grater
  • brush
  • oven

To start, preheat your oven to 400°F (200°C). Slice the eggplants into 1-inch rounds and place them on a baking sheet. In a small bowl, mix together the miso paste, mirin, sesame oil, and grated ginger. Brush the miso mixture onto both sides of each eggplant round.

Pop the baking sheet into the oven and bake for 20-25 minutes, or until the eggplants are tender and caramelized. While the eggplants are roasting, make sure to flip them halfway through to ensure even cooking.

Once the eggplants are done, remove them from the oven and let them cool slightly. To assemble the towers, stack the eggplant rounds on top of each other, alternating the direction of each round to create a tower effect. Sprinkle the towers with the sliced green onions and toasted sesame seeds for a burst of freshness and crunch.

This dish serves 2-3 people, with each serving weighing approximately 200g. One serving of these Miso Glazed Eggplant Towers is approximately 150 calories.

One unique tip for this recipe is to sprinkle a bit of extra sesame seeds on top of the towers just before serving. This extra touch adds a pop of flavor and a bit of extra crunch that takes this dish to the next level.
