The Perfect Comfort Dish: Cheesy Mushroom Stuffed Bell Peppers

Today, I’m excited to share a recipe that never fails to bring warmth and comfort to my kitchen — Cheesy Mushroom Stuffed Bell Peppers. This dish is perfect for a cozy night in or a family gathering, and the combination of flavors will surely impress your taste buds.

Ingredients:

  • 4 large bell peppers
  • 200g mushrooms
  • 1 onion
  • 2 cloves of garlic
  • 150g shredded cheddar cheese
  • 1 cup cooked quinoa
  • 1 teaspoon paprika
  • Salt and pepper to taste

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish, cut side up, and set aside.

In a saucepan, sauté chopped mushrooms, diced onion, and minced garlic until softened. Add cooked quinoa, shredded cheddar cheese, paprika, salt, and pepper. Stir well until everything is combined and the cheese is melted.

Spoon the mushroom and quinoa mixture into each bell pepper until they are full to the top. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes until the peppers are tender.

Once the bell peppers are cooked through, remove them from the oven and sprinkle some extra cheese on top. Return to the oven for another 5 minutes until the cheese is melted and bubbly. Serve hot and enjoy the gooey, cheesy goodness!
