Ingredients:

  • 300g chicken breast, cubed
  • 1 ripe mango, diced
  • 400ml coconut milk
  • 2 tbsp curry powder
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red chili pepper, sliced
  • 1 onion, chopped
  • 1 red bell pepper, sliced
  • 1 lime, juiced
  • Fresh coriander leaves, for garnish
  • Salt and pepper, to taste

To start, heat a large skillet over medium heat and add the garlic, ginger, and chili pepper. Cook for 1-2 minutes until fragrant, then add the onion and bell pepper. Cook for another 5 minutes until the vegetables are softened.

Next, add the curry powder to the skillet and toast for 1 minute to release its flavors. Add the chicken breast cubes and cook until they are browned on all sides.

Pour in the coconut milk and diced mango, stirring to combine. Bring the mixture to a simmer and let it cook for 15-20 minutes until the chicken is cooked through and the curry has thickened slightly.

Finish the dish by squeezing the lime juice over the curry and season with salt and pepper to taste. Serve the Spicy Mango Chicken Curry over steamed rice, garnished with fresh coriander leaves for a burst of freshness.

Tip:

For an extra kick of heat, add a dash of hot sauce or a sprinkle of crushed red pepper flakes to the curry before serving.
