Mouthwatering Mediterranean Stuffed Peppers: A Flavorful Adventure

Today’s Unique Creation: Mediterranean-Inspired Stuffed Peppers

Greetings, fellow foodies! Today, I am excited to share with you my latest kitchen experiment: Mediterranean-inspired stuffed peppers. This dish was born out of my love for the vibrant flavors of the Mediterranean region and my desire to create a unique and satisfying meal. I hope you enjoy making and savoring these delicious stuffed peppers as much as I do.

For this recipe, you will need the following ingredients:

  • 3 red bell peppers
  • 1 cup quinoa
  • 200g cherry tomatoes
  • 100g feta cheese
  • 50g kalamata olives
  • A handful of fresh parsley
  • 2 tablespoons olive oil
  • 1 lemon
  • Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • knife
  • cutting board
  • saucepan
  • baking dish
  • spoon
  • grater

Start by preheating your oven to 375°F (190°C). Wash the red bell peppers and cut off the tops. Remove the seeds and membranes from the inside of the peppers.

In a saucepan, cook the quinoa according to the package instructions. Once cooked, transfer the quinoa to a large mixing bowl.

Next, chop the cherry tomatoes, feta cheese, kalamata olives, and fresh parsley. Add them to the bowl with the quinoa. Drizzle in the olive oil and squeeze in the juice of the lemon. Season with salt and pepper, then mix everything together until well combined.

Stuff the mixture into the hollowed-out red bell peppers, packing it in tightly. Place the stuffed peppers in a baking dish and cover with foil.

Bake in the preheated oven for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and slightly charred.

Once cooked, remove the stuffed peppers from the oven and let them cool slightly before serving. Enjoy these Mediterranean-inspired stuffed peppers as a delicious and wholesome meal.

The approximate total weight of the cooked dish is 800g, with 3 servings. Each serving weighs approximately 267g. The approximate calorie count per serving is 350 calories.

One clever tip for this dish is to sprinkle some crumbled feta cheese on top of the stuffed peppers before serving for an extra pop of flavor and texture.
