As the weather warms up, I find myself craving light and fresh dishes that are bursting with flavor. That’s why today, I’m sharing my recipe for saffron honey glazed salmon with mango salsa. This dish is perfect for a summer dinner party or a quiet night in with your loved ones.

Ingredients:

  • salmon fillets (150g each)
  • saffron threads (pinch)
  • honey (30ml)
  • mango (1, diced)
  • red bell pepper (1, diced)
  • red onion (1/2, finely chopped)
  • cilantro (30g, chopped)
  • lime juice (30ml)
  • olive oil (15ml)
  • salt and pepper to taste

  • small saucepan
  • mixing bowl
  • chef’s knife
  • cutting board

Preheat your oven to 180°C and line a baking sheet with parchment paper. In a small saucepan, combine the honey and saffron threads over low heat until the saffron infuses the honey. Place the salmon fillets on the prepared baking sheet, brush them with the saffron honey mixture, and season with salt and pepper. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through.

While the salmon is baking, prepare the mango salsa. In a mixing bowl, combine the diced mango, red bell pepper, red onion, cilantro, lime juice, olive oil, salt, and pepper. Mix well to combine and set aside to let the flavors meld together.

Once the salmon is done, remove it from the oven and let it rest for a few minutes. Serve the saffron honey glazed salmon with a generous spoonful of mango salsa on top. The sweet and savory flavors complement each other perfectly, creating a dish that is both light and satisfying.
