Ingredients:

  • boneless, skinless chicken breast (300g)
  • ripe mango (1, peeled and diced)
  • bell pepper (1, sliced)
  • onion (1, thinly sliced)
  • garlic (3 cloves, minced)
  • ginger (1-inch piece, grated)
  • soy sauce (3 tbsp)
  • sriracha sauce (2 tbsp)
  • honey (2 tbsp)
  • rice vinegar (1 tbsp)
  • cornstarch (1 tbsp)
  • vegetable oil (2 tbsp)
  • salt and pepper to taste
  • cooked rice for serving

Start by slicing the chicken breast into thin strips and season with salt and pepper. In a mixing bowl, combine soy sauce, sriracha, honey, rice vinegar, and cornstarch to make the sauce. Heat vegetable oil in a wok over medium-high heat and add the chicken. Cook until browned, then remove from the wok and set aside.

In the same wok, add a bit more oil if needed and sauté garlic, ginger, onion, and bell pepper until fragrant and slightly softened. Return the chicken to the wok and pour in the sauce. Stir well to coat everything with the flavorful sauce. Add the diced mango and stir-fry for another couple of minutes until everything is heated through.
