  • 400ml coconut milk
  • 500g chicken breast, sliced
  • 1 onion, chopped
  • 1 red bell pepper, sliced
  • 2 tbsp curry powder
  • 1 tsp chili powder
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 lemongrass stalk, bruised

  • wooden spoon
  • knife
  • cutting board
  • grater

Start by heating some oil in a large saucepan over medium heat. Add the chopped onion, minced garlic, grated ginger, and sliced chicken breast. Cook until the chicken is browned on all sides. Add the curry powder and chili powder, stirring to coat the chicken and vegetables.

Next, pour in the coconut milk and add the diced mango, sliced bell pepper, and bruised lemongrass stalk. Season with salt and pepper to taste. Allow the curry to simmer gently for 20-25 minutes, or until the chicken is cooked through and the flavors have melded together.
