Today, I’m excited to share a fun and flavorful recipe for Spicy Mango Shrimp Tacos. As the weather starts to warm up, I find myself craving bright and zesty dishes that remind me of tropical vacations. These tacos are perfect for a casual dinner with friends or a quick weeknight meal that will transport you to a beachside paradise.

Ingredients:

  • 300g large shrimp (peeled and deveined)
  • 1 ripe mango (diced)
  • 1/2 red onion (thinly sliced)
  • 1 jalapeño (diced)
  • 1 lime (juiced)
  • 1/4 cup cilantro (chopped)
  • 8 corn tortillas
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Kitchen Tools:

  • knife
  • spatula

To start, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Saute the red onion and jalapeño until softened, about 2-3 minutes. Add the diced mango and cook for another 2 minutes until slightly caramelized. Return the shrimp to the skillet, then squeeze the lime juice over the mixture. Stir in the cilantro and season with more salt and pepper if needed.

In a separate skillet, heat the corn tortillas until warm and slightly charred. To assemble the tacos, divide the shrimp and mango mixture among the tortillas. Serve with extra lime wedges and cilantro on the side.

This recipe serves 4 and each serving is approximately 290g. One serving of these Spicy Mango Shrimp Tacos is around 380 calories.

A unique tip for this recipe is to add a sprinkle of chili powder to the shrimp for an extra kick of heat. It complements the sweetness of the mango perfectly and takes these tacos to the next level.
