Hey everyone, today I’m excited to share a unique dish that combines sweet and spicy flavors with a healthy twist. The inspiration for this recipe comes from my love of exotic fruits and bold spices, creating a dish that is perfect for a summer evening dinner.

For this spicy mango-infused tofu stir-fry, you’ll need the following ingredients:

  • 200g firm tofu, cubed
  • 1 ripe mango, peeled and diced
  • 1 green bell pepper, sliced
  • 1 red onion, thinly sliced
  • 1 tsp chili flakes
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • Cooked rice for serving

To bring this dish to life, you’ll need the following kitchen tools:

  • wok
  • knife
  • cutting board
  • measuring spoons
  • grater
  • spatula

Start by heating a tablespoon of sesame oil in a wok over medium heat. Add the minced garlic and grated ginger, and stir-fry for about a minute until fragrant. Next, toss in the cubed tofu and cook until golden brown on all sides.

Once the tofu is crispy, add in the red onion, bell pepper, and diced mango. Stir-fry for a few minutes until the vegetables are slightly tender but still crisp. Sprinkle in the chili flakes for a spicy kick, and pour in the soy sauce and rice vinegar for a tangy finish.

Continue to stir-fry the ingredients together for another couple of minutes, allowing the flavors to meld together. Once everything is heated through, remove the wok from the heat.

Serve the spicy mango-infused tofu stir-fry over a bed of cooked rice, allowing the vibrant colors and aromas to entice your senses. Each bite is a perfect balance of sweetness from the mango, heat from the chili flakes, and umami from the soy sauce.
