To create this dish, you will need the following ingredients:

  • 200g arborio rice
  • 150g mushrooms, sliced
  • 100g strawberries, chopped
  • 1 small onion, finely chopped
  • 1 liter vegetable broth
  • 150ml white wine
  • 50g parmesan cheese, grated
  • 50g butter
  • 2 tbsp olive oil

For this recipe, you will need the following kitchen tools:

  • wooden spoon
  • chef’s knife
  • cutting board
  • grater

Start by heating the vegetable broth in a saucepan over medium heat. In another large saucepan, heat the olive oil and 1 tablespoon of butter. Add the chopped onion and cook until translucent. Add the sliced mushrooms and cook until they are soft and slightly browned.

Next, add the arborio rice to the mushroom mixture and cook for a few minutes until the rice is toasted. Pour in the white wine and stir until it is absorbed. Begin adding the warm vegetable broth, a ladle at a time, stirring constantly and allowing each ladleful to be absorbed before adding the next.

Once the rice is cooked al dente, stir in the chopped strawberries and grated parmesan cheese. Season with salt and black pepper to taste. Finish the risotto by stirring in the remaining butter until it is melted and creamy.

The total weight of the cooked Mushroom and Strawberry Risotto is approximately 1000g. This recipe serves 4 and each serving weighs around 250g. One serving of this dish contains approximately 400 calories.
