  • penne pasta (200g)
  • peaches (2, sliced)
  • mint leaves (1/4 cup, chopped)
  • feta cheese (50g, crumbled)
  • olive oil (2 tbsp)
  • balsamic vinegar (1 tbsp)
  • honey (1 tsp)
  • salt and pepper to taste

Start by cooking the penne pasta according to the package instructions in a large pot of salted boiling water. While the pasta is cooking, preheat a grill pan over medium heat. Place the peach slices on the grill pan and grill for 2-3 minutes on each side until grill marks form.
