I was inspired to create this Peachy Pork Pasta recipe after a trip to the farmer’s market where I found the juiciest peaches of the season. The result is a dish that will surprise your taste buds and leave you craving more.

For this recipe, you’ll need the following ingredients:

  • pork tenderloin (cut into cubes) – 400g
  • peaches (peeled and diced) – 2 medium
  • pasta of your choice – 300g
  • onion (diced) – 1 medium
  • garlic (minced) – 3 cloves
  • chicken broth – 500ml
  • balsamic vinegar – 2 tbsp
  • brown sugar – 1 tbsp
  • fresh thyme – 1 tbsp
  • salt and pepper to taste

And don’t forget to grab these kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon
  • pot

To start, heat some oil in a large skillet over medium-high heat. Add the pork cubes and cook until browned on all sides. Remove the pork from the skillet and set it aside.

In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent. Add the diced peaches and cook for a few minutes until they start to soften.

Next, pour in the chicken broth, balsamic vinegar, brown sugar, and fresh thyme. Bring the mixture to a simmer and let it cook for about 10 minutes to allow the flavors to meld together.

While the sauce is simmering, cook the pasta according to the package instructions until al dente. Drain the pasta and add it to the skillet with the peach sauce. Toss everything together until the pasta is well coated.

Season with salt and pepper to taste, and serve hot with a sprinkle of fresh thyme on top.
