Ingredients:

  • all-purpose flour (200g)
  • unsalted butter, cold and cubed (100g)
  • water (50ml)
  • pears, thinly sliced (2 large)
  • blue cheese, crumbled (100g)
  • honey (2 tbsp)
  • fresh thyme leaves (1 tbsp)
  • salt and pepper (to taste)

Preparation:

Start by preheating your oven to 200°C (400°F). In a mixing bowl, combine the flour and cold cubed butter. Use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs. Add cold water gradually and mix until the dough comes together. Shape it into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

On a floured surface, roll out the dough into a rough circle. Transfer it to a baking sheet. Arrange the sliced pears in the center of the dough, leaving a border around the edges. Sprinkle the crumbled blue cheese over the pears. Drizzle the honey on top and sprinkle with fresh thyme leaves. Season with salt and pepper.
