  • dragon fruit (1 medium)
  • goat cheese (100g)
  • pine nuts (50g)
  • honey (2 tbsp)
  • fresh mint leaves (a handful)
  • olive oil
  • salt
  • black pepper

Preparation:

First, preheat your oven to 400°F (200°C). Wash and peel the purple sweet potatoes, then cut them into small cubes. Toss the sweet potato cubes with olive oil, salt, and black pepper on a baking sheet, and roast them in the oven for about 20-25 minutes until they are tender and slightly crispy.
